Tempeh Salad Sandwich

This recipe started out because I was sick of taking the same things camping. Time after time we would reheat our burgers or make simple sandwiches to cook on the fire. I needed something new to take ... but what?! One friend would always make a big batch of chicken salad it's easy and it tasted good. Lightbulb! I can make my version of a chicken salad. So welcome, Tempeh Salad to camping menu. We liked it so much that it I started to make a batch of and keep in the fridge for our lunches or snacks.




Tempeh Salad - Sandwich or Salad
Makes 2 cups

8 oz tempeh
1/4 c vegenaise
1 t lemon juice
3/4 t dill
1/2 t caraway
1/4 t garlic powder
1/4 t celery salt
1/4 t salt
1/4 t pepper

2 T red onion, diced
1/4 c + 2 T carrot, shredded 
1 t parsley


Cut tempeh into 1 inch cubes. Steam for 10 minutes.


Put tempeh, vegenaise and spices into a food processor and blend until there aren't any large lumps. Mix in onion, carrot and parsley by hand.


Works great on a sandwich or salad or as an appetizer with pita bread or crackers -- or just get out your fork and chow down!
