Avocado Hummus

My sister-in-law was stopping over since we haven’t seen her in forever! I love cooking for her -- she’s a Registered Dietitian as well as gluten free and vegan. Its fun trying to come up with new things that she can take back to her patients as well as enjoy herself. Whenever I see her she is eating some sort of hummus, regular, black bean, lentil, etc. I had the fixings for hummus as well as guacamole, which would normally be a fine snack, but for her I thought about combining them. I served it with tortilla chips and the four of us finished the entire bowl!

Avocado Hummus

Avocado Hummus

Makes 2 cups

1 avocado
1 15 oz can cannellini beans
2 t lime juice
1 T cilantro
1/4 c olive oil
1.2 t salt
1/4 t pepper
1/8 t cayenne
1/2 t garlic powder


Put all ingredients into your food processor. Add more olive oil to get your desired consistency.
