Homemade Peanut Butter


When I bought my Vitamix the first thing I made was peanut butter. Oh my goodness, since then I think the Vitamix has paid for itself just in my peanut butter savings. I was so sick of every peanut butter having added salts and sugars ... even the natural ones! I know it's a natural sweetener but really, does peanut butter need sweetening?! I didn't think so.

When done, I always like making a quick shake to get all the extra peanut butter that sticks to the side.

This recipe works great with almonds too. I have found that you really need to add coconut oil or some oil for almond butter otherwise it is too dry. 


Homemade Peanut Butter
Makes 3 cups

1 1/2 lbs. dry roasted peanuts, unsalted
1/4 c coconut oil (optional)

Put ingredients into your Vitamix and blend away! Takes about 30-45 seconds. You don't have to use coconut oil but it gives it a great creamy texture. Plus you get a little more goodness from coconut oil. In all honesty, once you try it ... it needs to convincing. The slight taste of coconut is amazing!
