4 Courses: Mexican

Happy Cinco de Mayo! Some people say this is more of an American Holiday than a Mexican Holiday. I did a little research and it is still celebrated in Mexico as source of inspiration when the Mexican people had shown courage and determination against the French Military. I think that is something that we can all celebrate. So as you celebrate today, think of something that you need a little courage and determination for ... make some extra spicy food and get the fire lit!

Today we are having a little Mexican fiesta with just the family. We have a lot of work to do but the celebration must go on. I decided that all of my courses needed to be made ahead of time and be quick and easy!

1st Course: Appetizer
Mango Guacamole and Homemade Tortilla Chips



2nd Course: Salad
Corn Salsa Salad, Served over romaine lettuce


3rd Course: Entree
Spinach & Sunflower Enchiladas


4th Course: Dessert
Chocolate Mole Truffles
