Garlicky Chive Blossom Butter

As I sit and pick weeds, my kids try to 'help'. Basically, they pick anything that they see. Now that my daughter is old enough to understand a little about the garden and we're picking more than just weeds, it's getting dangerous, she picks everything! She sees us picking different herbs and leaves and then tasting them all the time. She now eats everything that she can! Strangely, she has taken on a love for chive blossoms.

After a few days of her munching these, I decided I better start capitalizing on their goodness too. I am so glad I did. Garlicky Chive Blossom Butter is what I decided to do. I've been loving it. We've spread it on savory muffins, I've sautéed with it to give my vegetables a little extra flavor and  my favorite ... I've used it on garlic bread. Yum!

The chive flavor is very subtle in the flowers which I was nervous about it being overpowering and bitter. Other ways to use your blossoms are in soups, salads, eggs ... they are just as delicious as your chives but with a little extra beauty!

Garlicky Chive Blossom Butter

1 stick unsalted butter, at room temperature (vegan or regular)
10-12 chive blossoms, chopped
3 cloves garlic, minced

In a bowl, mix all ingredients until they are well incorporated. If you are making multiple sticks, use a stand mixer, your arms will thank you!

Depending on what you're doing with it, you can put it in a bowl to serve or place it on saran wrap and roll it into a log. Put it in the refrigerator for at least an hour to firm back up. Slice it, chunk it, cube it or serve it and use it anyway you'd like it!
