Garlic Scapes Hummus
Knowing that it's the end of the garlic scapes season we were off for the farmer's market this morning to get our last fix! I wanted to make some more Garlic Scapes Pesto and also some hummus!

Luckily, it's a beautiful day so when we got home, Paul wanted to take the kids for a bike ride and I got to do some fun cooking in the kitchen.

It's been weeks since we've had an open weekend and it's almost as if we don't know what to do with all the time. I love that I get to relax in the kitchen ... music up loud and uninterrupted snacking! However, I still find myself rushing because I do want to get outside too! It's pretty funny getting on a bike at 39 weeks of my pregnancy, but it's worth it! If all this garlic won't help move the baby along, the biking will!


Garlic Scapes Hummus

Makes 1 3/4 c

1 15 oz can garbanzo beans, drained and rinsed (cannellini beans work great too)
1/2 c garlic scapes, chopped
1/3 c olive oil
1 T fresh lemon juice
1/4 t paprika
1/4 t salt
1/8 t pepper


Put all ingredients into your food processor and mix well. Add more oil if you like a creamier hummus.
