It may be very cliché to say this but, 'When life gives you lemons, make lemonade.' I find this quote applicable in all aspects of life. Cooking is no exception. I wanted to make sweet potato fries to go with our dinner. I remembered trying sweet potatoes with truffle oil and served with a wasabi mayo. To me the truffle oil was a bit much, it's a personal preference but I don't think truffle oil should exist. A little drop is way too strong! It's just not natural! However, truffle salt is amazing. I reach in the cupboard and realize that it is all gone. Heart quickly sinks but I press on. I start perusing through my sea of spices and run by the lemongrass. Thinking that it would pair great with the sweet potato fries we gave it a whirl. The lemongrass with the wasabi mayo was awesome! I hope you like them!Lemongrass Sweet Potato Fries
2 cups of cut fries (in the picture I had both sweet and purple potatoes)1 T grapeseed oil
1 t lemongrass
Salt and Pepper to taste
Mix all ingredients in a bowl so the fries are completely coated. Bake at 375 for 15-18 minutes. Depending on your size of fry they may need a little more or less time so make sure you check.
Wasabi Mayo

1/4 c vegenaise
2 t prepared wasabi
1/2 t garlic powder
1/2 t toasted sesame seeds
Mix all ingredients together. Serve with fries or anything else that you want to dip in this great sauce!
