Sweet Potato & Bean Burgers

These burgers have been a work in progress for sometime. I hate when veggie burgers just fall apart or mush when you bite into them. These burgers have to have a crunchy outside and are soft on the inside ... a perfect veggie burger in my book! I like them even better heated up the next day! I didn't make mine too spicy because the kids were eating them too, but if you want a little more bite, add a little extra&nbsp sriracha.

Vegan Sweet Potato & Bean Burge


Sweet Potato & Bean Burgers

Makes 7

2 c sweet potatoes, diced
1/2 c quinoa
1 c water or vegetable broth
1  15 oz can pinto beans (black beans work great too)
2 scallions, diced
2 cloves garlic, minced
1 1/2 T lime juice
1 t tamari
1 t chili powder
1/2 t coriander
1/2 t cumin
1/2 t salt
1/2 t pepper
1/2 t sriracha
1/4 t paprika
3/4 c panko breadcrumbs or rice chips


Cook sweet potatoes in water until they are soft. Drain water

Cook quinoa in water. Bring both to boil and lower heat. Leave until quinoa has soaked up all the water. If they are still a little hard add a touch more water until all are done.

Put remaining ingredients into a bowl. Mash with a potato masher until the beans are smashed and all the ingredients are thoroughly mixed.

Mix in sweet potatoes and quinoa to the bean mixture.

Scoop out 1/2 c patties. Bake at 400ยบ for 30 minutes, flipping them half way through.



Vegan Sweet Potato & Bean Burger Patties

I like to serve them on a bun with avocado, greens, a tomato and a little garlicky vegenaise.
