Everyday
I feel like I am in a lunch rut. The kids have the same 5 or 6 meals all the time. I always
stop and think that Paul eats the same one meal everyday for lunch, and probably
most people do. It was a grilled cheese in the rotation today and I just couldn’t
bring myself to make one. I do pride myself on always sneaking spinach and
nutritional yeast in the sandwich and occasionally hemp seeds or pistachios to
dress it up but even that seemed mundane today. Things started to snowball and I began to think
about how much it bothered me that Savina won’t eat carrots. What kid doesn’t
eat carrots?! I know she has two teeth but even if I steam them she spits them
out or throws them at me … whatta peach! I think it’s just the rain outside
that is giving me this gloom ... but I press on.
In
comes the idea to sneak in carrots to the grilled cheese. I still got my
spinach in there too! The kids loved it and it was so good I decided to have
one too. Rain, you can’t stop me. The kids ate their whole sandwich plus roasted
potatoes (and even started to steal my extra carrots and eat those … even
Savina was sucking on one).
Veggied
Grilled Cheese
Makes
2 sandwiches
4
slices whole wheat bread
2
T orange butter
4
T cream cheese
1
t dill
dash
of salt
handful
of spinach, julienned
handful
of shredded carrots
Mix
a little fresh orange juice in some butter. (I like to have a citrus butter on
hand for toast or brightening up something that needs brightening)
Mix
cream cheese with dill and salt.
Butter
bread on outside. Layer on the inside cream cheese mixture, spinach then
carrots. Grill on both sides until golden brown.
