Veggie Potato Pancakes

Sometimes I spend way too much time on dinner I run out of time for a side dish. Sadly, depending on the dinner, the kids only want to eat the side dish so it's kind of a big deal in my house.

I was in that rut today, running out of time but they just had roasted potatoes last night. I am short on vegetables right now (only one week until my first CSA box and I'm ready!). Since I needed potatoes to be the base since that's what I had I figured a potato pancake would do, but I could try to sneak in some more vegetables making those the star flavors!

The shredded carrots and zucchini worked out great. Make sure you squeeze the extra liquid out of the potatoes and zucchini, otherwise there is a lot of extra water in them.


Potato Pancakes

Veggie Potato Pancakes

Makes 5 pancakes

1 1/2 c potato, shredded and squeezed
1/2 c carrot, shredded
1/2 c zucchini, shredded and squeezed
2 T flour
1 T nutritional yeast or parmesan cheese if you don't have any
1/2 t salt
1/2 t pepper

Mix all ingredients together. Heat a little oil in pan. Pour 1/3 c of the mixture for each pancake. Fry each side for about 3-4 minutes.
